the Spice Library’s Spices Zaatar Spice blend is an Arabian/Middle-Eastern spice blend with a zingy flavour consisting of roasted spices, salt, sumac, thyme and toasted sesame seeds. Zaatar Spice is a perfect companion with warm crusty Turkish bread and EVOO.
Use this Spice blend as a dry rub for fish, chicken or pork.

Method:
- Combine well 4-5 tablespoons of good quality olive oil or the spice library Persian ghee with 2-3 tablespoons of Spice blend.
- Rub the spice mix over 500g of chicken breast or thigh fillets until well coated.
- Then roast in the oven at 160-180ºC for 20-30mins.
Serve on a bed of rocket and pear salad using the Sumac salad dressing recipe.
Other examples are try sprinking this on flat bread with olive oil – cook under grill or in wood fired oven for 2-3 minutes until crispy. Then break into small pieces and serve on the side of hummus.
