Persian Cumin Rice Side Dish Favourite.
Persian Cumin Rice or Zeereh Polo is white & fluffy rice grains perfumed with roasted cumin seeds. The delivery of this rice is unique to Persian cuisine and regarded as an art. It is the foundation to Persian cooking and the golden crusty rice layer at the bottom (tah-dig) is a treat for senses.
Persian Cumin rice is best served with curries or the Persian split-pea stew.
Persian Cumin Rice Cooking tips:
- Highly recommended to use Tefal or non-stick pots for rice.
- For Biryani style rice, make a well in the centre of rice, add marinated lamb/chicken/veges and cook on low heat for at least 1.5-2 hours until all is cooked.
