Mulato chilli is a dried Poblanos chilli. This popular chili is described as to be sweet in flavour with a hint of smoky chocolate, licorice, cherries and coffee.
Very similar in appearance to the Ancho chilli and they are closely related. They are Both are derived from Poblano chillies. The difference between these two gourmet chilies is the time of harvest.
When allowed to fully ripen turning a dark brown where they’re then harvested and dried. Additional ripening time adds to the Mulato’s flavor characteristics. That is a more full-bodied and complex flavor than that of Ancho Chilli.
