Mulato chilli is a dried Poblanos chilli. The flavour profile of this popular chili is described as sweet with hints of smoky chocolate, licorice, cherries and coffee.
Mulato Chilli is very similar in appearance to the Ancho chilli and they are closely related. Both are derived from Poblano chillies. The difference between these two gourmet chilies is the time of harvest.
Ancho chillies are picked when they ripen to red which is then dried.
Mulato chillies are allowed to fully ripen turning a dark brown where they’re then harvested and dried. This additional ripening time adds to the Mulato’s flavor characteristics. That is a more full-bodied and complex flavor than that of Ancho Chilli.
This is the key ingredient in making traditional Mexican Mole sauce.
