Morita chilli is a red and ripe jalapeno pepper which is smoked.
These chillies are about 3-5cm long. The smoking process is shorter resulting in softer fruity flavour.
The flavor profile of morita chili is described to be sweet with hints of smoky chocolate, licorice, cherries and coffee.
Because of this flavour profile, this chilli is a perfect substitute for Chipotle Chilli.
In Mexican cooking, they are the preferred chilli for making salsa seca, or “dry salsa”.
The smoky and nutty salsa compliments rich fatty meats, especially those that have been braised for a long time.

- Combine fried peanuts, sesame seeds and garlic with the toasted dried Mortitas
- Season with salt and lime. The smoky and nutty salsa compliments rich fatty meats, especially those that have been braised and benefit from the added textural element.
