Gaujillo Chilli is a deep red chilli with berry overtones and mild in flavor.
This dried mexican chilli extensively used in Mexican dishes such as Salsas for Tamale. The dried Chillies are seeded, soaked, pulverized to a thin paste, then cooked with salt and several other ingredients to produce a thick, red, flavorful sauce.
Other ingredients used are white sesame seeds, achiote paste and mexican oregano.
