This spice is used for making the popular Mexican and South American achiote paste. To make Achiote paste, blend equal parts of the annetto powder to Mexican oregano, Cumin seeds, black peppers and all spice. Add enough water to make a paste. pulverize into a homogenous paste.
Store in the fridge for up to 2-3 weeks. To use as a rub for chicken or meat, mix with garlic, salt and vinegar and olive oil. Marinade for at least 1 hour before roasting or grilling.
Serve with fresh salsa.
