Annatto Seeds -small indented with a powdery red-oxide covering. These Seeds are commonly used in South American and Mexican Cuisines for making achiote paste. This spice is a natural food colouring. The flavours described as mild earthy with a hint of nutmeg.
Annatto Seeds Cooking suggestions:
Used for making the popular Mexican and South American achiote paste. To make Achiote paste, blend equal parts of the annetto seeds to Mexican oregano, Cumin seeds, black peppers and all spice. Add enough water to make a paste. pulverize into a homogenous paste.
Store in the fridge for up to 2-3 weeks. To use as a rub for chickenĀ or meat, mix with garlic, salt and vinegar and olive oil. Marinade for at least 1 hour before roasting or grilling.
Serve with fresh salsa.
