Turkish okra dried also known as Bayme is widely used in Turkish cuisine.

- First re-hydrate okra in a pot of boiling water for 2-3 minutes. Once cooled, remove the string. Rinse under cold water and add a pinch of salt. Let it stand.

- Okra can be covered in a simple chickpea batter and then deep fried. Served on top of stew or soup.
